This pasta salad has been a favorite in our family for years and is always made for all kinds of celebrations. It tastes really delicious, very fruity but not too exotic. It’s best prepared the day before so it really marinates. Cook the pasta according to the package instructions. Put the eggs on the heat and boil them until hard-boiled. In the meantime, mix the remoulade, meat salad, peas, mushrooms, chopped apples, and gherkins. Drain the mandarins and add the juice to the salad dressing. Season with salt, pepper, and paprika. Once the pasta has cooled, add it to the salad dressing. It’s best to leave the eggs in the refrigerator overnight to chill and then add them to the salad the next day, sliced. Season again to taste after the salad has marinated.
