Pasta salad with bacon, feta cheese, tomatoes and peppers

Ingredients for 4 servings:

  • 250 noodles
  • 50 g bacon, lean, smoked, diced
  • 75 g feta cheese, marinated in herb oil
  • 3 large tomatoes
  • 2 garlic cloves
  • 1 large onion(s)
  • 1 large bell pepper(s)
  • 4 tbsp olive oil, or use the oil from the pickled cheese
  • 1 small bunch of chives
  • 3 tbsp sour cream
  • 3 tbsp natural yogurt
  • salt and pepper
  • Herbs of Provence
  • basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook pasta in boiling salted water until al dente, drain, rinse, and transfer to a bowl. Finely dice the onion. Cut the tomatoes and bell peppers into bite-sized cubes. Dice the smoked bacon. Finely dice or press the garlic. Dice the cheese. Finely chop the chives. Add everything to the salad bowl. Add the sour cream, natural yogurt, and olive oil. Season with salt, pepper, and herbs to taste. Mix well. You can eat it right away or let it sit for a while.
