Pasta salad with corn, peppers and co

Ingredients for 8 servings:

  • 1 small can of peas, extra fine
  • 1 small can of corn
  • 1 small jar of tomato peppers
  • 500 g pasta (e.g. Trulli from Birkel)
  • 1 package of ham, cooked
  • 1 bag of cheese (Gouda), grated
  • 1 onion(s), finely diced
  • 1 cup sour cream
  • 250g mayonnaise, 250g
  • 1 package of mixed herbs (8 herbs, frozen)
  • salt and pepper
  • Paprika powder
  • 1 tbsp ketchup
  • Cayenne pepper

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cook the pasta until al dente. Dice the ham. Drain the vegetables, reserving the draining water from the tomato and peppers for the sauce. Place everything in a bowl and mix. For the sauce, mix together the mayonnaise, ketchup, sour cream, draining water from the tomato and peppers, 8 herbs, and diced onion. Season to taste with the specified spices and then stir into the vegetable/ham/pasta mixture. Let it marinate well (at least 2 hours). Just before serving, stir in the grated Gouda cheese. Tip: It also tastes good without the ham and cheese. The salad is then less rich and goes well with grilled food or shish kebab. It is even lighter if you use crème fraîche instead of mayonnaise.
