Pasta salad with dried tomatoes

Ingredients for 4 servings:

  • 250 g pasta
  • 100 g tomatoes, dried in oil
  • 600 g zucchini
  • 2 onions, red
  • 200 g whipped cream
  • salt and pepper
  • 1 pinch(s) of sugar
  • Balsamic vinegar, white
  • 1 bunch of basil
  • Sunflower seeds

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cook the pasta until al dente. Drain the tomatoes, reserving the oil, and dice them. Dice the zucchini and onion. Heat the tomato oil and sauté the onion. Add the zucchini and sauté briefly. Pour in the cream, bring to a boil, and remove from the heat. Immediately add the pasta and diced tomatoes. Season with salt, pepper, vinegar, and sugar. Finally, stir in the finely chopped basil and toasted sunflower seeds. Let stand for at least 2 hours.
