Ingredients for 25 servings:
- 1 kg chicken (thigh fillets)
- 125 ml sake
- 185 ml soy sauce, dark
- 125 ml wine (Mirin = sweetened rice wine)
- 2 tbsp sugar
- 65 g spring onion(s), cut diagonally into 4 cm pieces

Chicken skewers
Soak 25 wooden skewers in water for about 20 minutes. Cut the chicken fillets into bite-sized pieces. Combine the sake, soy sauce, mirin, and sugar. Bring to a boil and set aside. Thread the fillet pieces onto the skewers, alternating with the spring onions. Grill the skewers on a baking sheet lined with aluminum foil for 7-8 minutes under the broiler. Brush and turn frequently with the sauce until the meat is cooked through.
