Ingredients for 25 servings:

  • 1 kg chicken (thigh fillets)
  • 125 ml sake
  • 185 ml soy sauce, dark
  • 125 ml wine (Mirin = sweetened rice wine)
  • 2 tbsp sugar
  • 65 g spring onion(s), cut diagonally into 4 cm pieces

Working time approx. 20 minutes; Total time approx. 20 minutes

Chicken skewers

Soak 25 wooden skewers in water for about 20 minutes. Cut the chicken fillets into bite-sized pieces. Combine the sake, soy sauce, mirin, and sugar. Bring to a boil and set aside. Thread the fillet pieces onto the skewers, alternating with the spring onions. Grill the skewers on a baking sheet lined with aluminum foil for 7-8 minutes under the broiler. Brush and turn frequently with the sauce until the meat is cooked through.
