Ingredients for 4 servings:
- 250 g pasta
- ½ bunch of spring onions
- 250 g mushrooms, fresh
- 1 bunch of basil
- 2 tbsp oil (sesame oil)
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp oil
- salt and pepper
- Cayenne pepper
- 1 lemon(s), the juice
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the noodles in salted water with oil until al dente, drain, rinse, and let drain. Rinse and trim the spring onions and slice them into rings. Grate the mushrooms, slice them, and drizzle with half the lemon juice. Rinse the basil, shake dry, and finely chop the leaves. Mix with the mushrooms, onions, and noodles. Mix together the sesame oil, soy sauce, remaining lemon juice, peanut butter, salt, pepper, and cayenne pepper. Pour over the salad, serve, and garnish with basil if desired. I saute the mushrooms with finely chopped onions first; I personally prefer it.
