Pasta salad with salmon

Ingredients for 4 servings:

  • 350 g noodles (kritharaki)
  • salt water
  • 2 spring onions
  • 1 red bell pepper(s)
  • ½ cucumber(s)
  • 1 onion(s)
  • 1 garlic clove(s)
  • 8 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tbsp mustard, medium hot
  • 250 g salmon (smoked salmon), sliced
  • salt and pepper

Cook the rice noodles in plenty of salted water until al dente. Slice the spring onions into rings and dice the bell pepper. Halve the cucumber lengthwise, remove the seeds, and finely dice. Peel and finely chop the onion and garlic. Briefly sauté both with the spring onions in 1 tablespoon of olive oil. Drain the pasta and toss to combine. Fold in the diced cucumber and bell pepper strips. For the marinade, combine the remaining oil with the balsamic vinegar, lemon juice, and mustard. Season with salt and pepper. Cut the salmon into pieces and fold in.
