Pasta salad with seafood

Spread the love

Ingredients for 10 servings:

  • 500 g Miracle Whip
  • 500 g surimi sticks, frozen
  • 500 g pasta (croissants)
  • 500 g gnocchi (pasta, not potato gnocchi)
  • salt water
  • 300 ml ketchup
  • 500 g shrimp(s), small, cooked
  • 1 bulb(s) garlic
  • some chili
  • 2 bunch dill, fresh
  • 100 g shrimp(s), medium-sized, cooked

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cook both types of pasta in well-salted water until almost “al dente” and place in a bowl. Once cooled, carefully add cold water until the pasta stops absorbing any more. This prevents the pasta from absorbing too much of the dressing and making the salad dry. Meanwhile, place the Miracle Whip in a bowl and grate in about half of the frozen surimi using a cucumber slicer on the finest setting (or, if you prefer something more sophisticated, a truffle slicer will also work). The surimi will break into tiny pieces and give the dressing a delicious flavor. Finely chop the garlic and add it along with the ketchup and dill. Mix everything well and gently season with a little chili. Then cut the remaining surimi into pieces and add it to the sauce with the shrimp. Now the sauce and pasta finally come together, and the salad is ready. Finally, garnish with the larger shrimp and fresh dill.
