Pasta salad with yogurt-cheese dressing

Ingredients for 4 servings:

  • 250 g pasta
  • 1 ½ bell peppers
  • 90 g gherkins
  • 6 cocktail tomatoes
  • 120 g peas
  • 8 stalks of chives
  • ½ tbsp wine vinegar
  • ½ tbsp olive oil
  • ½ tsp mustard
  • 200 g natural yogurt
  • 50 g Gouda, grated
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

vegetarian

Cook the pasta. Add the peas 2-3 minutes before the end of cooking. Chop the vegetables. Mix everything in a bowl. For the dressing, combine the wine vinegar, olive oil, mustard, and yogurt in another bowl. Then add the cheese to the dressing and season with salt and pepper. Combine the pasta, vegetables, and dressing in a bowl and season again with pepper. Tip: Don’t add the dressing until about 2 hours before serving.
