Pasta salad with zucchini and dried tomatoes

Ingredients for 4 servings:

  • 250 g pasta
  • 100 g dried tomatoes in oil
  • 600 g zucchini
  • 2 onions, red
  • 200 g whipped cream
  • 3 tbsp vinegar (white wine vinegar)
  • 1 bunch of basil
  • 30 g pine nuts
  • Pepper, freshly ground

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cook the pasta in plenty of salted water according to the package instructions. Drain well in a sieve. Drain the tomatoes, reserving the oil. Dice the tomatoes. Trim the zucchini and cut into thin sticks. Peel and dice the onions. Heat the tomato oil and sauté the diced onions until translucent. Add the zucchini sticks and fry for one minute. Add the cream and bring to a boil, then remove from the heat. Immediately stir in the pasta and tomatoes. Season the salad with salt, pepper, and vinegar. Rinse the basil, pat dry, and cut into strips. Toast the pine nuts in a dry pan, stirring occasionally, then stir into the salad along with the basil. Let the pasta salad sit for at least two hours.
