Roast pork in spicy beer sauce

Ingredients for 4 servings:

  • 1,200 g pork neck
  • Salt and pepper, black, adMühle
  • 2 tbsp clarified butter
  • 3 onions
  • 200 ml meat broth (possibly instant)
  • 2 tsp peppercorns
  • 3 tbsp juniper berries
  • 250 ml beer
  • 2 tsp caraway seeds
  • 600 g potatoes
  • 750 g leek, thin stalks

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours 10 minutes

Neck at its best!

Rub the pork neck with salt and pepper and sear it on all sides with the onions in a roasting pan in butter. Pour in about 100 ml of the stock, add the pepper and juniper berries in a tied gauze bag. Place the roasting pan in an oven preheated to 200 °C and braise uncovered for about half an hour. Add a little beer and stock every now and then. After the 30 minutes of braising, replace the lid on the roasting pan and braise for about another 70 minutes. Sprinkle the potatoes with caraway seeds and add them after 40 minutes. Add the blanched leeks to the roasting pan after 80 minutes.
