Pasta with bacon and caper sauce

Ingredients for 4 servings:

  • 500 g tagliatelle pasta
  • Salt
  • Thyme
  • 2 tbsp capers
  • 2 bunch of spring onions
  • 100 g smoked bacon
  • 5 tbsp butter
  • 3 tbsp vinegar (sherry vinegar)
  • 400 ml chicken broth
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta as usual. Clean the thyme and pick off the leaves. Roughly chop the capers. Slice the spring onions diagonally. Fry the bacon in a tablespoon of butter until crispy, add the onions, and sauté for 1 minute. Deglaze with the vinegar and let the liquid evaporate. Pour in the chicken stock and reduce by half over medium heat. Stir the remaining butter into the sauce in small pieces. Add the capers and thyme and let it simmer briefly. Season with salt and pepper and add to the pasta.
