Pasta with baked feta and caramelized onions

Ingredients for 2 servings:

  • 400 g onion(s)
  • 200 g feta cheese
  • 2 tbsp olive oil
  • 2 tbsp honey
  • salt and pepper
  • 200 g pasta

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, slice the onions into strips and mix them with olive oil and honey in a baking dish. (If the honey is too hard to mix, warm it slightly in a water bath.) Season with salt and pepper to taste. Place the feta cheese in the center of the baking dish and cover with aluminum foil. Bake in an oven preheated to 200°C (top/bottom heat) for about 30-45 minutes on the middle rack. About 10 minutes before the end of the cooking time, add the pasta and cook according to the package instructions until al dente. Remove the baking dish from the oven, mash the feta, and mix the onions and feta into a sauce. If necessary, add 2-3 ladles of the pasta water for consistency. Add the pasta and mix with the sauce.
