Pasta with cheese

Ingredients for 4 servings:

  • 500 g spaghetti or linguine or spaghettini
  • salt water
  • 150 g cheese (caciocavallo or pecorino romano)
  • lots of pepper, black from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

super easy

Cook the pasta in salted water according to the instructions until al dente. In the meantime, grate the cheese into a preheated bowl (rinsing it several times in hot water is enough). Grate a little bit of cheese separately; it will go on top later (it looks nicer). When the pasta is almost done, add about 1-2 ladles of the cooking water to the cheese in the bowl and stir to create a slightly creamy sauce. Drain the pasta and toss with the cheese sauce to coat the pasta nicely. Serve on plates, season generously with pepper, and sprinkle with the remaining cheese. If this looks too plain for you, simply throw a few arugula leaves on top, or garnish with small tomato quarters, or whatever you like.
