Pasta with leaf spinach and tomato sauce

Ingredients for 2 servings:

  • 500 g pasta (wholemeal pasta, linguine or farfalle)
  • 200 g leaf spinach (frozen)
  • 1 m.-sized onion(s)
  • 1 package of tomatoes, pureed
  • 45 g cream cheese 0.2% fat
  • salt and pepper
  • Paprika powder, hot
  • some tomato paste
  • herbs to taste

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta as usual. Thaw the spinach (either beforehand or, if you’re in a hurry, in the microwave), then tear it up a bit if necessary. Dice the onion and brown it slightly in a hot, nonstick pot, stirring frequently. Add the tomato paste. Then add the thawed spinach leaves and let it sizzle a bit. Deglaze with the passata and season with salt, pepper, and paprika. Finally, stir in the cream cheese. Now either pour the mixture over the pasta or add the pasta to the sauce in the pot first and then serve (optionally sprinkle with herbs). It’s quick, and with whole-wheat pasta and the 0.2% fat cream cheese, it only has 3.5 points, and it’s really filling.
