Pasta with mushrooms and cashew sauce

Ingredients for 2 servings:

  • 400 g whole wheat pasta
  • 350 g mushrooms
  • 3 tbsp olive oil
  • 1 bunch of chives
  • 70 g potatoes, peeled and cut into small pieces
  • 100 g cashew nuts
  • 250 ml vegetable stock
  • nutmeg
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

For the sauce, combine all ingredients in a pot, simmer for about 15 minutes, and then blend. Meanwhile, cook the whole-wheat pasta in salted water as directed on the package. Then, sauté the mushrooms in olive oil. Chop the leek and set aside 2 tablespoons. Add the spaghetti and sauce to the pan, season with salt and pepper, add the leek, and mix everything together. Garnish with about a teaspoon of leek and serve warm.
