Pasta with Peanut and Spinach Sauce

The perfect pasta with peanut and spinach sauce recipe with a picture and simple step-by-step instructions.

  • 250 g Pasta to your liking
  • 2 Onions
  • 2 Garlic cloves
  • 250 g Cherry tomatoes
  • 400 g Baby spinach
  • 200 ml Oat cream
  • 100 ml Vegetable broth
  • 5 El Peanut butter
  • Juice of 1/2 lime
  • 1 pinch Raw cane sugar
  • Salt pepper
  • 3 El Roasted and salted cashews
  • Oil
  1. Cook the pasta as usual.
  2. Chop the garlic and onion very finely and sauté in a little oil. Add the spinach and cook for about 5 minutes.
  3. Pour in the stock, cream and peanut butter and mix well until the peanut butter has completely dissolved. Season to taste with lime juice. Season with salt and pepper if necessary.
  4. Quarter the cherry tomatoes. Mix the pasta with the spinach and peanut sauce and fold in the tomatoes. Chop the cashews. Divide the pasta on plates and sprinkle with cashews.
