Pasta with radicchio sauce

Ingredients for 4 servings:

  • 500 g pasta, e.g. B. Linguine, spaghetti, tagliatelle,…
  • 4 tbsp olive oil, maybe a little more
  • 1 large onion(s)
  • 4 garlic cloves
  • 1 small radicchio
  • 4 tbsp tomato paste
  • 300 ml water
  • n. B. Salt and pepper, black, ground
  • 1 pinch of chili powder
  • ½ tsp nutmeg

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

To prepare the pasta, bring water to a boil in a large pot and cook the pasta until tender. At the same time, heat the olive oil in a pan and stir in the finely chopped onion and garlic cloves until translucent. Depending on the pan, you may need more olive oil. In the meantime, remove the stalks from the radicchio and chop it finely. Add the lettuce to the pan and mix well with the onions. Add the tomato paste and water and simmer with the lid closed for about 5-7 minutes. Finally, add the seasonings and continue to simmer with the lid closed until the pasta is ready. Stir the salad occasionally. Drain the pasta in a colander and divide between plates. Pour the radicchio sauce over it. Alternatively, you can of course drain the pasta in a colander, then return it to the pot, add the sauce from the pan to the pasta in the pot, and stir in the sauce in the pot.
