Pasta with rocket, mascarpone and Parma ham

Ingredients for 4 servings:

  • 500 g pasta, e.g. spirals
  • 2 m.-sized onion(s)
  • 1 can/n tomatoes, in pieces
  • 250 g mascarpone
  • 1 bunch arugula
  • 100 g Parma ham, thinly sliced
  • Salt
  • pepper
  • butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta according to the package instructions and keep warm. In the meantime, wash and dry the arugula, and tear it into bite-sized pieces. Finely dice or chop the onions, then sauté them in the butter. Add the canned tomatoes (they’re of the same good quality year-round; no peeling required, simple, aromatic) to the onions and let the liquid reduce slightly. Now add the mascarpone and stir until melted. Season the sauce with salt and pepper. Cut the Parma ham (Serrano ham or similar also works) into strips about 2 cm wide, add it to the sauce with the arugula and pasta, and mix. It’s filling, but simple and incredibly delicious.
