Pasta with salmon and sour cream sauce

Ingredients for 2 servings:

  • 250 g pasta, e.g. E.g. penne or spaghetti
  • 200 g sour cream
  • 2 spring onions
  • ½ lemon(s), juice
  • some broth
  • 200 g salmon
  • 2 tsp garden herbs
  • 2 tbsp oil
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta according to the package instructions. Finely chop the spring onions and set a small portion aside. Sauté the rest in oil in a small saucepan. Cut the salmon into pieces approximately 1 x 1 cm in size. If you don’t like your salmon raw, you can add it now and cook it a little, stirring regularly. Add the sour cream, stock, lemon juice, and garden herbs and stir the sauce over low heat for a few minutes. Season with salt and pepper to taste. Drain the pasta a little before you plan to serve it and add the sauce to the pan with the pasta. Simmer gently over medium heat until the pasta is cooked to your desired consistency. Sprinkle the remaining spring onions over the pasta when serving.
