Cucumber salad with peppers, radishes and pumpkin seed oil

Ingredients for 3 servings:

  • 1 cucumber(s)
  • 5 large radishes
  • 1 bell pepper(s), red
  • salt and pepper
  • Salad herbs
  • 1 tsp mustard
  • 1 small piece(s) of sugar cube
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tbsp pumpkin seed oil
  • ½ cup natural yogurt, approx. 75 g

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix all the dressing ingredients together in a bowl. Peel and thinly slice the cucumber, season with salt, and set aside. Wash and thinly slice the radishes, then add them to the dressing (they can sit there for a while). Halve the bell peppers, remove the seeds, and peel if necessary (I always do this for easier digestion), then cut them into thin strips and add them to the prepared dressing. Just before serving, squeeze some juice from the salted cucumber with your hands and add it to the dressing. Mix everything together thoroughly and serve.
