Pasta with sautéed onions and anchovy fillets

Ingredients for 2 servings:

  • 300 g onion(s), peeled
  • 2 tbsp olive oil
  • salt and pepper
  • 2 pinches of thyme, shredded
  • 1 pinch(s) Pul Biber
  • 8 anchovy fillets
  • 50 g crème fraîche
  • 200 g pasta
  • some parsley, freshly chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Halve the onion and slice into thin strips. Heat the olive oil slightly, fry the onion strips, and season with salt, pepper, thyme, and the pul biber. Cover the pan and sauté the onions over low heat for about 15-18 minutes (depending on the thickness of the strips). They shouldn’t brown; otherwise, add 1-2 tablespoons of water. Finely chop the anchovy fillets and mix them with the crème fraîche into the onions. Season to taste. While the onions are sautéing, cook the pasta according to the package instructions. Drain the pasta and toss with the onions. Serve on plates and sprinkle with parsley.
