Ingredients for 2 servings:
- 250 g pasta
- 2 spring onions
- 50 g arugula
- 2 tomatoes, quartered
- 200 g smoked salmon
- 50 g olives, green
- 3 tsp capers
- Salt and pepper from the mill
- 2 tbsp oil, good
- Parsley, chopped
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook pasta according to package instructions. Heat oil in a pan, add spring onions, tomatoes, olives, capers, and salmon, and sauté lightly. Season with salt and pepper. Add arugula to the pasta. Serve on plates and garnish with parsley.
