Pasta with tomato and herb sauce

Ingredients for 4 servings:

  • 100 g tomatoes, dried in oil
  • some water
  • 2 tsp oregano
  • 1 tsp rosemary
  • 2 tbsp olive oil
  • 1 onion(s), finely chopped
  • 3 cloves garlic
  • 2 tbsp parsley
  • some salt and pepper
  • 350 g pasta of your choice
  • salt water
  • some basil for garnishing
  • some Parmesan cheese to sprinkle on top

Working time approx. 20 minutes; Total time approx. 20 minutes

simple, fast but still special

Cook the pasta in salted water until al dente. Finely chop the sun-dried tomatoes and blend 2/3 of them with a little water. Chop the herbs. Heat the oil in a large pan. Add the onion and sauté for 5 minutes until translucent. Add the finely chopped garlic and sauté briefly (but not too long). Add the tomato puree and pieces. Bring to a boil and simmer over low heat. Stir in the herbs, season the sauce with salt and pepper, and simmer for about 1 more minute. Mix the pasta with the sauce and garnish with Parmesan and basil.
