Pasta with tomatoes, mushrooms and cottage cheese

Ingredients for 4 servings:

  • 500 g pasta
  • 300 g mushrooms, sliced
  • 6 tomatoes, diced
  • 300 g cottage cheese
  • 2 onions, finely diced
  • 4 cloves garlic, finely chopped
  • 1 small can of tomato paste
  • 1 chili pepper(s), finely chopped
  • 100 ml vegetable stock
  • some red wine
  • Salt
  • pepper
  • Sugar
  • n. B. herbs, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta according to the package instructions until al dente. Drain. Meanwhile, sauté the mushrooms and onions. Then add the tomato paste, chili pepper, and garlic and sauté briefly. Deglaze the vegetables with stock and red wine, then add the cottage cheese. Season the sauce with salt, pepper, and a little sugar and simmer until reduced to the desired consistency. Pour the sauce over the pasta and serve, sprinkled with fresh herbs to taste.
