Pasta with white Alba truffle

Ingredients for 4 servings:

  • 125 g butter
  • 250 g pasta
  • salt water
  • 10 g truffle (white Alba truffle)
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Melt the butter in a deep frying pan over low heat, being careful not to burn. Add the pasta to a pot of salted water and cook until al dente, then drain, but don’t throw away the water! Add a little pasta water to the butter, about 10 tablespoons. Bring to a boil until creamy. Turn off the heat and grate in the truffle with a truffle slicer, stirring, and ensuring it stops boiling. Stir to combine, then stir in the pasta and serve on a plate.
