Pasta with wild garlic, peppers, feta and peas

Ingredients for 1 servings:

  • 2 handfuls of pasta of your choice
  • 1 small piece(s) of red bell pepper(s), washed and diced
  • 1 handful of peas
  • 2 handfuls of wild garlic, fresh, washed, cut into strips
  • 1 pinch of coconut oil
  • e.g. feta cheese
  • some pepper
  • chili
  • possibly lemon juice and/or water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Vegetarian, quick and for those who want, also vegan

Prepare the pasta according to the package instructions. Heat the coconut oil in a pan, fry the diced bell peppers for about 4 minutes, then add the peas (still thawed) and fry for another 4 minutes. Stir in the wild garlic strips until they wilt. If desired, add a little lemon juice and/or water for a creamier texture. Add the pasta to the vegetables, mix well, and finally add the feta, pepper, and chili. I omit the salt altogether, as most feta cheeses are very salty. Stir everything together and let it sit for a moment, then serve.
