Pasta with zucchini and minced meat sauce

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 1 large zucchini
  • 2 tbsp olive oil
  • 150 g minced meat, mixed
  • 1 tbsp thyme, fresh leaves
  • ½ lemon(s) , (grated peel and juice)
  • 250 ml water
  • 1 tsp gravy
  • Salt
  • Pepper, freshly ground
  • 2 tbsp sauce thickener, for light sauces
  • 250 g pasta (bavette, spaghetti or other)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and dice the onion. Rinse and slice the zucchini. Heat olive oil in a large pan. Brown the minced meat until crumbly. Add the onion, zucchini, thyme, and lemon zest and sauté briefly. Pour in 250 ml of water and stir in the meat juices. Season with salt and pepper. Cover and cook for 10 minutes. Stir in the sauce thickener and simmer for 1 minute while stirring. Add the juice of half a lemon. Cook the pasta in plenty of salted water according to the instructions until al dente. Finally, drain the pasta, let it drain well, and serve with the sauce.
