Patates Köfte – potato cutlets with bulgur

Ingredients for 5 servings:

  • 1 kg potatoes, floury (preferably)
  • 3 onions
  • 1 tbsp tomato paste
  • 2 tbsp parsley, finely chopped
  • 1 ½ cups bulgur
  • Oil or butter
  • Salt
  • 2 tsp Pul Biber

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil and peel the potatoes until tender. Then mash them and season with salt. Heat a little butter or oil and fry the finely chopped onions, then add the tomato paste and fry everything for about 2 minutes. Pour enough boiling water over the bulgur in a bowl until it is just covered and let it simmer. Add the swollen bulgur to the potatoes with the parsley, onions and tomato paste and knead everything together. Season with salt and pul biber. Form small balls, flatten slightly and bake in the oven at 200 degrees Celsius for about 20 minutes. Finally, heat about 4 tablespoons of butter or oil in a pan and drizzle over the kofte arranged on plates.
