Ingredients for 4 servings:

  • 400 ml water
  • 1 cube of vegetable stock
  • 4 tbsp green spelt, whole
  • 9 tbsp green spelt, crushed
  • 2 eggs
  • 2 tbsp parsley, chopped
  • 1 onion(s)
  • pepper
  • Oil for frying
  • 8 rolls, whole grain
  • 1 cup herb curd
  • 2 tomatoes
  • 1 small cucumber(s)
  • 1 onion(s)
  • e.g. lettuce (head lettuce)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

with green spelt

Bring the water and vegetable stock to a boil and add the whole green spelt noodles. Simmer for 10 minutes. Then add the green spelt noodles and heat for another 10-15 minutes until the liquid has evaporated. Allow the mixture to cool. Peel the onion and chop into small cubes. Wash and chop the parsley. Mix the onion, eggs, and parsley with the green spelt mixture. Form the mixture into eight patties and fry in a pan until crispy on both sides. Don’t turn them over too soon. In the meantime, spread the quark on the wholemeal rolls, slice the onion, cucumber, and tomatoes, and trim the lettuce. Finally, top the rolls as desired.
