Ingredients for 4 servings:
- 6 m.-large egg whites
- 1 pinch(s) of cream of tartar or baking powder
- 1 pinch of salt
- 300 g sugar, very fine
- 600 g whipped cream
- 1 tsp vanilla flavor
- 2 kiwi(s), sliced
- 250 g strawberries, sliced
- 3 peaches, ripe, sliced
- 1 mango(s), ripe, sliced
- 2 tbsp orange liqueur (e.g. Cointreau), if desired
- e.g. mint, fresh for garnishing

Preheat the oven to 110°C. Line three baking sheets with baking paper and draw a 22 cm diameter circle on each one. Beat the egg whites until stiff, then stir in the cream of tartar and salt. While stirring constantly, add 200 g of sugar and beat for 2 minutes until glossy. Transfer the meringue mixture to a piping bag fitted with a perforated nozzle and fill the circles, then bake for 3 hours. Remove from the oven and let cool. Whip the cream with the remaining sugar and vanilla extract until stiff peaks form. Place the fruit in a bowl and drizzle with orange liqueur. Place one meringue layer on a cake plate. Spread with 1/3 of the whipped cream and top with 1/3 of the fruit. Repeat the process with the remaining layers, cream, and fruit. Decorate with mint and serve immediately.
