Pea and mint cream soup

Ingredients for 3 servings:

  • 3 cup(s) peas, frozen
  • 1 onion(s)
  • 2 cloves garlic
  • 12 mint leaves
  • 500 ml milk
  • 1 cube of vegetable stock
  • salt and pepper
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and finely dice the onions and garlic. Heat the oil in a saucepan and sauté the onions and garlic until translucent. Reduce the heat slightly. Add the peas and sauté lightly. Pour in the milk and season with stock. Simmer for a few minutes until the peas are completely soft. Finely chop the mint and stir in. Purée with a hand blender until the mixture reaches the desired consistency. Season with salt and pepper.
