Cherry chutney

Ingredients for 1 servings:

  • 500 g cherries
  • 50 g sugar
  • Pepper, black from the mill
  • 1 piece(s) ginger, thumb-sized
  • 1 tsp cinnamon
  • 3 tbsp vinegar (white wine vinegar)

Wash and pit the cherries. Bring to a boil with the sugar. Finely dice the ginger and add it. Season with pepper, cinnamon, and vinegar. Simmer the chutney until thickened, stirring continuously. The cherries should be broken down and contain little liquid (careful: they burn easily!). Pour into clean jars, seal, and turn the jars upside down until cool. This chutney goes wonderfully with goat’s cheese, blue cheese, or Manchego.
