Peach dessert

Ingredients for 4 servings:

  • 750 ml peach juice
  • 50 g cornstarch
  • 6 tbsp sugar (more to taste)
  • 1 lemon(s), untreated, a strip of peel
  • 200 ml cream
  • 2 packets of vanilla sugar
  • possibly cream, as decoration

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the cornstarch with the vanilla sugar and stir in a little of the juice until smooth. Bring the remaining juice to a boil with the sugar and lemon zest, then remove from the heat and add the cornstarch to the juice, stirring constantly. Bring back to a boil briefly. Let the cream cool, stirring occasionally. Remove the lemon zest. Whip the cream until stiff peaks form and fold into the cream. Pour everything into dessert glasses and refrigerate for at least 1 hour. Decorate as desired before serving (with cream, chocolate sprinkles, brittle, or even a few peach slices). My children also like chocolate sauce. Note: It’s best to keep the sugar level low at first and add more sugar later, as most juices are already sweetened.
