Ingredients for 1 servings:

  • 150 g dark chocolate coating
  • 4 chocolate cookies (milk chocolate cookies)
  • 200 g flour
  • 2 tbsp, levelled cocoa powder
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 2 eggs
  • 80 g sugar
  • 100 ml oil
  • 150 ml milk
  • 1 can peach(s)
  • 200 g sour cream
  • 200 g cream
  • 2 packets of vanilla sugar
  • 1 pack of cream stiffener
  • n. B. Chocolate shavings

Instructions

Working time approx. 55 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 15 minutes

with crispy biscuit crumbs – for 12 muffins

First, chop 100g of chocolate coating and melt it in a bowl over a hot water bath. Allow to cool slightly. Crumble the biscuits. Mix the flour with cocoa powder, baking powder, and salt in a bowl. In another bowl, whisk together the eggs, sugar, oil, and milk until the sugar is dissolved. Then add the flour mixture and biscuit crumbs and mix briefly. Add the melted chocolate and stir quickly. Line a 12-hole muffin tin with paper baking cups and fill the cases with the batter. Bake in a preheated oven at 180°C (top/bottom heat) for about 20 minutes. Remove from the oven and let the muffins cool in the tin for about 10 minutes, then place on a wire rack. Drain the peaches and cut 2/3 of them into small cubes, then cut the rest into wedges. Whisk the sour cream and cream until stiff peaks form, gradually adding the vanilla sugar and cream stabilizer. Stir in the chopped fruit. Spoon this cream over the muffins. Garnish with chocolate shavings and the remaining peach slices. 415 calories per muffin.
