Ingredients for 4 servings:
- 6 peaches, fresh, pitted
- 3 shallots, finely diced
- 1 garlic clove(s), finely diced
- ½ tsp sambal oelek
- 2 tbsp oil
- 1 sprig(s) of thyme
- 1 sprig(s) marjoram
- 1 bay leaf
- 100 ml wine, white, dry
- 200 ml cream
- 400 ml peach juice or multivitamin juice
- 200 ml water
- ½ tsp broth, granulated
- 2 tbsp peach liqueur
- salt and pepper
- Natural yogurt
- Pesto (basil pesto)
- Thyme, fresh
Instructions

For fans of sweet and savory cuisine
Roughly dice the peaches. Sauté the shallots and garlic cubes in oil, add the peaches, the sambal oelek (or finely chopped chili pepper), and the herbs. Deglaze with wine. Pour in the cream, juice, and water. Sprinkle with granulated stock and a little salt and pepper. Simmer gently in a covered pan for about 20 minutes, until the peaches are soft. Remove the herb sprigs and bay leaf. Purée the soup with a hand blender. For a more rustic look, leave the soup as it is. For a finer texture, strain the soup through a sieve. Finally, season to taste with the peach liqueur, salt, and pepper. Garnish the soup with a few dollops of pesto and natural yogurt, and scatter with thyme leaves. Shrimp or chicken breast fillet strips fried in olive oil and herbs are also suitable as garnishes.
