Peach – Vanilla – Ragout

Ingredients for 2 servings:

  • 5 peach(s)
  • 60 ml liqueur (apricot or peach liqueur)
  • 1 slice(s) butter
  • 1 vanilla pod(s)
  • powdered sugar
  • 125 ml water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

lukewarm fruit ragout – tastes perfect with Kaiserschmarren or cake

Chop the peaches into pieces. Heat the butter in a pan and fry the peach pieces, stirring occasionally. Once they’re well browned, add a little sugar and the vanilla pod and fry briefly. Deglaze with a generous splash of liqueur. If desired, you can also flambé the peaches! Once the alcohol has reduced, add more sugar and pour in the water. Reduce the liquid over low heat until a creamy sauce forms. Serve while still warm!
