Peanut Butter Chocolate Chunk Cookies

Ingredients for 1 servings:

  • 200 g peanut butter
  • 80 g margarine, e.g. Alsan
  • 120 g plant milk (plant drink), e.g. rice milk
  • 160 g sugar
  • 1 bottle of butter-vanilla flavoring
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 360 g flour
  • 100 g chocolate chunks, dark, e.g. from Ruf
  • n. B. Sugar, for rolling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, melt the margarine and mix it with the peanut butter until smooth. Now add the sugar, plant-based milk, butter-vanilla flavoring, and salt and mix well. Mix the flour with the baking powder and add it to the dough. The dough should now have a firm consistency; if it’s too sticky, add another tablespoon of flour. Finally, fold in the chocolate chunks. Preheat the oven to 180 degrees fan/convection oven. Form the dough into approximately 35 balls. First, roll the balls in sugar, place them on baking paper, and bake in the preheated oven for 10-12 minutes. Immediately after baking, flatten the hot balls with a fork and let them cool completely on the baking sheet.
