Peanut butter muffins

Ingredients for 12 servings:

  • 200 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 100 g chocolate (pieces)
  • 100 g peanuts, chopped unsalted
  • 1 egg(s)
  • 120 g sugar, brown
  • 120 g peanut butter
  • 60 ml oil, neutral
  • 250 g buttermilk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 160°C. Place paper baking cups into the holes of a muffin tin. Place the flour in a bowl and mix with the baking powder, baking soda, chocolate chips, and 60g of chopped peanuts. Lightly beat the egg in another bowl. Add the sugar, peanut butter, oil, and buttermilk and mix well. Add the flour mixture to the egg mixture and stir just until the dry ingredients are moistened. Pour the batter into the holes and sprinkle with the remaining 40g of chopped peanuts. Bake in the oven at 160°C (fan assisted) for 20-25 minutes. Let the muffins rest in the baking tray for another 10 minutes, then remove from the tin.
