Peanut cake with yogurt and chocolate chips

Ingredients for 1 servings:

  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 75 ml oil
  • 100 g peanuts, roasted, unsalted
  • 100 g flour
  • ½ pack of baking powder
  • 1 pinch of salt
  • 150 g natural yogurt
  • 60 g chocolate drops
  • Butter and flour for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

for a 15 cm loaf pan

Preheat the oven to 180°C fan/gas mark 3. Butter and flour a small 15 cm loaf pan. Beat the sugar, vanilla sugar, and eggs with a mixer until fluffy. Slowly add the oil while stirring. Grind the peanuts in a food processor. Mix the peanuts with the flour, baking powder, and salt. Briefly stir the flour mixture and yogurt into the batter until a smooth batter forms. Fold in the chocolate chips with a tablespoon. Pour the batter into the pan. Bake the cake in the hot oven for about 40 minutes (use a toothpick to check if it’s cooked through). Double the amount of ingredients for a regular-sized cake pan.
