Mango-avocado tartar with pomegranate and arugula

Ingredients for 4 servings:

  • 4 avocados, ripe
  • 2 mangoes, ripe
  • 2 handfuls of arugula
  • 1 pomegranate
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Chili flakes, optional
  • 1 tbsp olive oil
  • 1 balsamic cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Vegan

Halve the avocado, remove the pit, and cut the flesh into small cubes. Drizzle with lime juice to prevent discoloration. Peel the mango and also cut into small cubes. Remove the seeds from the pomegranate. Using a serving ring, first place a layer of avocado cubes on a plate and press down lightly. Then place the mango cubes on top of the avocado and press down lightly. Carefully place the arugula on top of the tartar. Sprinkle the pomegranate seeds on top. Season with salt, pepper, and optionally chili flakes. Finally, drizzle everything with olive oil and balsamic vinegar. Serve immediately and enjoy!
