Mix the flour with sugar and salt. Add the butter, cut into pieces and rub in briefly. Add the egg yolk and water and quickly knead everything into a smooth dough. Wrap the dough in foil and chill for at least 30 minutes. Roughly chop the chocolate. Drain the pears in a sieve and score them fan-shaped. Butter a tart tin. Roll out the dough to about 3 mm thick and place in the tin. Prick several times with a fork. Spread the chopped chocolate on top and arrange the pears decoratively on top. Beat 1 egg and the egg yolks with the sugar until frothy. Briefly stir in the cream. Scrape out the vanilla pod and add the seeds to the egg and cream mixture. Spread the cream between the pears. Bake the tart at 200 °C on the lowest rack in the oven for about 30 minutes.
