Pear and Ginger Cake

The perfect pear and ginger cake recipe with a picture and simple step-by-step instructions.

  • 160 g Soft butter or margarine
  • 150 g Sugar
  • 200 g Flour
  • 2 tsp Baking powder
  • 1 tsp Ginger powder
  • 3 Pc. Whisked eggs
  • 600 g Pears
  • 1 tbsp Brown sugar
  • 1 tbsp Butter in flakes
  1. Work the butter, eggs, sugar and ginger powder into a smooth dough. Mix flour and baking powder, sieve and stir in.
  1. Pour the batter into a parchment-lined springform pan. Peel the pears and cut into fine wedges. Spread over the dough in a fan shape and press lightly into the dough. Cover with flaky brown sugar and butter.
  1. Bake in a preheated oven at 180 degrees (top / bottom heat) for 35 – 40 minutes until golden yellow.
  1. I really like ginger, but at first I couldn’t imagine it in a cake. The ginger is really very subtle with the specified dosage. Next time I will also cut a small piece of fresh ginger and mix it with the dough.
