Pear Quiche

Ingredients for 4 servings:

  • 300 g flour
  • 150 g butter
  • 1 egg(s)
  • Salt
  • 1 onion(s)
  • 150 g smoked bacon, streaky
  • 2 pears, ripe
  • butter
  • 2 eggs
  • 150 ml whipped cream
  • 100 g mountain cheese, grated
  • Salt
  • pepper
  • nutmeg
  • Oil, for greasing
  • Flour, for rolling out

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead flour, butter, egg, and a pinch of salt with 5-6 tablespoons of cold water into a smooth dough. Let rest in foil for 30 minutes. Peel and dice the onion. Cut the smoked bacon into thin strips. Halve, peel, core, and slice the pears. Fry the bacon, add the onion, and sauté until translucent. Add the butter and pear slices. Sauté the pears. Season with pepper and nutmeg. Mix the eggs with the cream and grated cheese, and season with salt and pepper. Grease a quiche dish with oil. Roll out the dough on a floured surface and line the dish. Spread the pear and bacon mixture on top and pour the egg and cream over it. Bake in a preheated oven at 200°C for 20-25 minutes.
