Pear Tart

The perfect pear tart recipe with a picture and simple step-by-step instructions.

  • Butter for the mold
  • 3 Pears
  • 1 Puff pastry roll
  • Flour for the work surface
  • 40 g Citronat (Succade)
  • 250 g Cream
  • 2 Eggs
  • 50 g Ground almonds
  • 40 g Powdered sugar
  1. Preheat the oven to 200 degrees and butter the pan. Peel, halve and core the pears
  1. Roll out the puff pastry on a floured surface and line the mold with it. Chop the lemon peel and spread on the puff pastry. Whisk the cream with the eggs, almonds and powdered sugar, leave to swell for 20 minutes.
  1. Spread the almond mixture on the puff pastry base and spread the pears on top with the cut surface facing up and press down lightly. Bake in the preheated oven for 35 minutes, serve warm or cold.
