Pears, beans and bacon

Ingredients for 4 servings:

  • 400 g bacon, streaky
  • 1 onion(s)
  • ½ liter of water, hot
  • 400 g green beans
  • 4 cooking bulbs
  • 1 handful of savory
  • 1 bunch of parsley
  • Salt and pepper, from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Typically North German!

Add the bacon and diced onion to 1/2 liter of water, bring to a boil, and simmer over low heat for about 20 minutes. Remove the bacon, slice, and keep warm. Wash and trim fresh green beans and add them to the broth. Season with salt, pepper, and finely chopped savory. Bring the broth back to a boil and simmer the beans over medium heat for about 15 minutes. After 5 minutes, place the pears, skin and stem on, but without the blossoms, on the beans and simmer for another 10 minutes. Place the bacon slices on the beans and return to the heat. Arrange the beans, pears, and bacon on a warmed platter and sprinkle with finely chopped parsley. Reduce the broth slightly over high heat and pour over the dish. Serve with boiled potatoes. Truly northern German!
