Pecan-crusted crowns of lamb

Ingredients for 2 servings:

  • 500 g rack of lamb(s) (lamb crown)
  • 50 g pecans
  • 2 garlic cloves
  • 1 tbsp breadcrumbs
  • 3 tbsp olive oil
  • 1 tsp soy sauce
  • 1 tsp balsamic vinegar, dark

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat the oven to 200 degrees Celsius. Pat the lamb crowns dry thoroughly. Finely grind the pecans and press the garlic. Mix all ingredients. It should form a thick porridge. Spread the porridge on the meat side. Roast in the oven for about 40 minutes. Tip: We like to serve this with broad beans.
