Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 2 onions
  • Cayenne pepper
  • 2 eggs
  • 150 ml water
  • ½ tsp salt
  • 400 g flour
  • 3 bay leaves
  • salt and pepper
  • Water for boiling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and chop the onions and add to the minced meat. Season with salt, pepper and cayenne pepper. Mix the eggs, water, salt and flour into an elastic dough and let it rest, covered. Halve the dough, roll it out thinly and use a glass (approx. 5 cm in diameter) to cut out dough pieces. Using a fork, distribute the minced meat among the pieces (approx. 1 teaspoon) and shape into tortellini. Press the edges firmly together. Bring a large pot of water to a boil, add bay leaves, sazl and pepper for seasoning. Add the pelmeni to the boiling water and simmer for approx. 5 minutes. Serving suggestion: Various sauces go well with the pelmeni, e.g. tomato sauce, ketchup or broth flavored with fondant and sour cream. Tip: Pelmeni are less calorie-rich and a bit juicier if you add very finely chopped white cabbage to the minced meat.
