Penne with bacon, broccoli and mancheco

Ingredients for 4 servings:

  • 100 g bacon, streaky farmer’s bacon, (dried meat)
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 1 red pepper
  • 500 g broccoli
  • 320 g penne, or more to taste
  • 50 g cheese, Mancheco sliced ​​or other hard cheese
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

First, cut the bacon into 4 mm thick slices and then into sticks. Peel the garlic, press it down lightly, and fry it in a pan with half of the olive oil until golden brown. Add the chili pepper and bacon and fry well. Now remove the garlic and chili pepper and remove the pan from the heat. Wash the broccoli and cut it into small florets and pieces. Cook the penne and broccoli in boiling salted water for about 5-6 minutes until al dente. Drain and then add it to the pan with the bacon. Mix everything well and cook for 3 minutes, stirring. Season with pepper and salt if desired. Transfer the penne to warmed plates, sprinkle with cheese, and drizzle with the remaining olive oil. Serve immediately.
