Penne with Vodka and Salmon Sauce

Ingredients
 

  • 200 g Penne
  • 1 Shallot
  • 1 Clove of garlic
  • 150 g Salmon fresh
  • 4 Cherry tomatoes
  • 1 tbsp Olive oil
  • Salt
  • Pepper from the grinder
  • Espelette pepper
  • 50 ml Vodka
  • 100 ml Cream
  • 1 tbsp Mascarpone
  • Freshly grated Parmesan

Instructions
 

  • Peel the shallot and garlic. Finely dice both. Dice the salmon as well. Heat the olive oil in a pan, fry the salmon in it, quarter the cherry tomatoes. Add cherry tomatoes, shallots and garlic and sauté. Season with salt, pepper and Espelette pepper. Deglaze with vodka. Stir in the cream and mascarpone, reduce a little.
  • In the meantime, cook the penne in plenty of salted water until al dente. Pouring off. Mix the pasta with the sauce. Spread over 2 plates and serve sprinkled with Parmesan.
